This is not a recipe book。 It’s a book about Aaron Franklin and his approach to barbecue。 If Aaron didn’t have such crazy accolades and an impressive reputation I would have thought said his approach is simplistic… and it is。 Ironically, when it comes to smoking, simple is hard。 Using real wood, source good ingredients。 Aaron doesn’t hide anything。 He even gives a slight tutorial on how to build your own smoker from scratch (like he has done for all of his smokers)。I like his playful and humble This is not a recipe book。 It’s a book about Aaron Franklin and his approach to barbecue。 If Aaron didn’t have such crazy accolades and an impressive reputation I would have thought said his approach is simplistic… and it is。 Ironically, when it comes to smoking, simple is hard。 Using real wood, source good ingredients。 Aaron doesn’t hide anything。 He even gives a slight tutorial on how to build your own smoker from scratch (like he has done for all of his smokers)。I like his playful and humble writing style, and I especially love alp the beautiful pictures in this book。 It’s really hard to read and not be hungry。 It’s especially frustrating knowing he’s in Texas and I’m in Minnesota。Great book for aspiring smokers。 。。。more

I was never especially good with smoking brisket until I read this book。 My brisket went from a six to a nine following his techniques。 The main game changers were controlling temperature with fuel quantity instead of air flow, understanding the stall, and final cooking wrapped in butcher paper instead of foil。

Like zen and the art of motorcycle maintenance for meat smokers。 So much more than a cook book。 In fact it has only four recipes bit so many valuable lessons。 I loved reading every second of this。 Franklin’s passion translates near perfectly to print in this manifesto。

I’m hungry now! I have recently started smoking meat and wanted a book that not only told me what I was doing, but why I was doing it。 I enjoyed the geeky science aspects and learning what’s happening to the meat and the smoker while cooking。 As a Traeger owner, I definitely feel like I’m cheating! That being said, I’ve learned so much and maybe one day I’ll be brave enough to cook like Franklin!

Definitely and interesting read。 Franklin is a fascinating character。 I didn’t really find it all that useful as an instructional book though。 His equipment is pretty specialized and his techniques fairly dogmatic。 I’m not sure it translates all that well to the casual backyard bbq
